Spiri what a great read! That transported me back to 20-something years ago when a family friend (who married into the macedonian culture) taught my mum how to make spanakopita the Northern Greek way. It was as though I was watching mum and Thia Nitsa doing it all over again! Thank you for capturing it so beautifully xx
